Hmmm. I don't know what that wire/cable could be. My '81 doesn't have anything connected to the waterpump. My first thought is that it would be a ground, but I'm sure some early model owners would know for sure.
Have you joined FiatSpider on Facebook? There are people from this forum there with older cars that my have your answer. And then there's mirafiori.com. A lot of experienced people there that don't go to this or other sites. A great resource.

BTW the wire is now broken because I was going mad while trying to remove it and I still don't know what it is (actually it wasn't going TO the water pump but just close to it, I think it was some sort of sensor... oh well, I will discover it when I will be able to remove the remaining part from the engine.)
Still in the process to trying to figure out what some of the cables and wires on the left side of the engine are... the manual is referred to a CS2 '79/'82 model and it's almost impossible to understand something through the (badly) scanned images.

Ok, I need assistance... as always...
Can someone pretty please help me to identify some stuff and give me the right procedure to disconnect something?
First of all, in the picture below, I don't understand what the manual says about that cable. Is it enough to unscrew the two bolts/screws and remove the cable?
Then, what about the throttle mechanism? The manual talks about the one positioned over the engine, not about this one, and I don't know where do I have to disconnect it. I've signed with the red arrows what I think I should remove, is it correct?
And what about this hose? It goes under the intake manifold but I can't see where it comes from.
And what is this? I can't see anything connected to it. It's located just under the MC.
Last question, these three cables that go under the intake manifold are connected with a big plastic connector inside the left fender. Is it ok to disconnect all of them from that connector or it's preferable to remove each of them from the engine (I don't know what are they for though).
Sorry for all these questions but I'm stuck with all these cables, hoses and wires... I can't even find a proper manual for my AS... so, I'm going mad because I'm waisting a load of precious time...
Please be patience, I've never pulled an engine and I'd like to learn...

No, replacing the starter on a 69. Did I paste the wrong link? No. I just checked it. Don't know why it's taking you there. Click on show all, and there should be a thread on replacing the starter below that one (post date is 24 Jul 2013).
Although, I guess since your removing the engine it would be easier to do then. But there's plenty of good info on that forum anyway. Search the archives too.

Here is my best guess on the pics.
Pic #4 either crank case vent that used to connect to the air breather or the vacuum hose to the brake booster. Is the end of this hose connected to the underside of the intake or the engine block?
Pic # 5 Steering box. That is the adjustment on top that you can take slack out of the sreering with
Pic # 6 Those look to me like the wires going to the starter solinoid .That red wire should be coming from your ignition switch. Like I said, hard to tell from this angle.Your car is 9 years older than mine.

Dennis, that hose in pic #4 is going to the fuel pressure regulator (I think that's the correct name of the component), while your guess on pic #5 was correct, that's the top of steering box and pic #6 I'm still not sure due to the lack of space to identify them properly but I've just disconnected the big connector and the wires will come off along with the engine, so I'll let you know soon

My problem is now related almost only to the throttle linkage, I still don't understand how to disconnect it from the carb!
Today I've finally found some sort of Workshop Manual for my car. I've called the "Libreria dell'Automobile", an automotive specialized library in Milan, and the man of the library told me that there are not a lot of images in there but all the procedures to disassemble the engine are there (in English of course, it seems impossible to find a FIAT related book in Italian! Not a big issue but still funny tho!). Fingers crossed, my brother will take me here the book on Monday or Tuesday.
In the meantime I will go on with the transmission and by reading on how to remove the ball joints and all the suspension stuff to replace all the bushes and suspensions (I will have to do it at some point, so better start studying).

Questions: when removing the drive shaft, do I have to mark something so when I put it back it's already balanced? Or it's not necessary?
Also, I'm able to shift through the gears without pushing on the clutch pedal. Is it a clutch problem (so it needs to be changed) or is it something else that I should be worried of?
Last question, it will be easier to pull the engine if I remove the alternator and the fan before, am I right? Any tips about this procedure?

I would say mark the drive shaft so it goes on the same alignment,engine will come out ether way in removing the alternator etc,
Put a new clutch,pressure plate,throw out bearing in being it all apart
