Am I correct here?

The black wire at the back of the switch is power from the battery. The red is power to the starter solenoid. The brown wire is power to the starter motor?

The black wire is always hot, the brown wire is hot in the "on" position and the red wire is hot when starting the car and not hot when in the "on" position?

Not if your wiring matches the wiring diagrams. Your 79 appears to be wired the same way my 81 was:

Inputs to the switch:
Black - power in to the switch
Brown - power in to the switch

Outputs from the switch:
Red - Switched power in the start position - drives the starter
Pink - switched power in the run and start positions
L Blue/Black - switched power in the run and start positions
