I am about to purchase a used cylinder head from a '78, to use on my '79.
Is there anything else I will want to get from the guy when I buy it? I plan to have it cleaned and rebuilt when I get it, just wondering about other parts that I might want from the donor.

i think your question is a little vague. do you mean DIRECTLY related to the head swap? Or, in general.
significant interior cosmetic differences (especially the seats & doors) between '78 & '79. Other areas nearly zero difference. that is, if the '78 is a donor parts car. Nice to grab the brake calipers if available...they can be used for cores, or rebuilt..lots of salvage choices.
but, if you are referring to just the head swap, as mark says, intake and exhaust manifolds might be a wise idea. If you already have them .. how about grabbing his anyway for resale? that will help finance your conversion project.
