Anybody have any experience with using a Weber 38/38 DGEV ON A 2 liter engine? I realize it’s a bit of a hassle with linkage swap - Especially since the 79 engine is mounted in a 73 body.

I had one, and after many $$ in jets and hours of tuning, gave it up. It is a synchronous carb; both barrels open and close simultaneously. While it made lots of power, it was terrible on the street. The transition from idle to main jets was unmanageable under part throttle. I think you'd be much happier with a 32/36.
