I want to remove the ideogram potentiometer, and just have the dash lights at full brightness. I assume I disconnect the wire that goes to ground (red striped green) and connect the other two together (black striped violet & yellow striped red). If this is correct please let me know.

That sound correct, but are you aware that it does not dim the gauges?
On your '75 there should be a round knob for the gauge lights, and the 'ideogram potentiometer' which is a black thumb wheel, which dims the heater switch and lever light on the lower console.
I have eliminated the round gauge dimmer knob from my '71, but I don't think the gauges are any brighter.
